2 lbs chicken wings
2 scallions, chopped
2 cloves garlic, bashed
1 inch ginger, sliced
2 tablespoons Chinese brown sugar, cubed
2 tablespoons Chinese ice sugar, cubed
1/2 cup soy sauce
1/4 cup dark soy sauce
2 cups hot water
1 piece dried mandarin peel

Begin by boiling 2 cups of hot water in a pot. Pour the hot water over the chicken wings to soften the skin.
In a large cooking pot, heat some oil over medium heat. Add the ginger, garlic, and scallions and sauté until fragrant.
